It's funny, because my conceptions of what's "healthy" (or, I guess, "healthful") have changed so much in just 18 months. I guess I am easily influenced by nutritional science. At least I'm no longer easily influenced by food commercials.
So, my question is, would you be interested in hearing about the books I read, the people I talked to, and the recipes I've tried? When I tell people we eat very little meat, they always ask me, "So...what DO you eat?" I would have asked the same question a couple of years ago.
And I'm interested: What's your healthy eating ideal? And where does it come from? Your mom? Books? The food pyramid? Or does your body just tell you what it needs?

ooo! I want recipes and books! Meat is expensive here and we like to try a lot of vegetables and fruits and grains in our meals. So please send me your info!
We eat lots of lentils and beans. What other non-meat suggestions do you have? I'd also love to know what books you read!
I get so confused with all the health information that floats around, but knowing what trusted friends do puts legitimacy to conflicting information. So yea let us know!

I'm not a meat-lover by nature, so it isn't hard for me to go a bit meat-free. We eats loads of fresh fruits and veggies and I'm a sucker for the grains - pasta, bread etc. If you're bored go poke around nutrimirror.com it's an online food journal, but there is also an AWESOME journal room full of people learning about food. I LOVE it.
OH Please share! I'd love to hear all about it! And please post some recipes! I've been trying to get into eating vegetarian 2-3 times a week and cant seem to figure out the best way to do it!
I definitely want to know what books you read! We don't eat much meat around here either, but I feel like we could do much better in the fruits and veggies department. The hard thing for me is that sometimes it seems hard to eat really healthy on a budget. Or maybe I just don't know what I'm doing?

One of our favorites is Banana Ice Cream. This is way simple--and is a pinterest idea. You get 5 bananas that are spotty and then you slice them and freeze them for an hour. After that you put them in your blender or food processor, with a tablespoon of baking cocoa and a spoonful of peanut butter (optional) and maybe a tiny bit of milk and PRESTO!! You have banana ice cream with the consistency of soft serve, but it is just Bananas. It is Great. Let me hear if you have anymore good recipes. I am the cook, and love to hear 'em.
